How to Bake Mini Oreo Cupcakes with Oreo Frosting (Video Included)
I don't buy store bought cookies often, but when I do, it's pretty much always a box of Oreos. They are fantastic on their own, dipped in milk, crushed up and sprinkled on top of ice cream, used as a crust for cheesecake, and so much more. Recipe for Mini Oreo Cupcakes with Oreo Frosting
Makes 12 Mini Oreo Cupcakes
Ingredients:
DRY
40g (1/3 cup) flour
35g (1/4 cup) crushed Oreos (about 3 Oreos)
50g (1/4 cup) granulated sugar
Ā¼ teaspoon baking soda
Ā¼ teaspoon salt
2 Ā¼ teaspoons cornstarch
2 Ā¼ teaspoons buttermilk powder
30g (2 Tablespoons) butter, soft
WET
15g (1 Tablespoon) veg oil
30g (2 Tablespoons) water
1 large egg
Ā½ teaspoon vanilla extract
Ā½ teaspoon vinegar
FROSTING
1/4 cup butter, soft
pinch of salt
35g (Ā¼ cup) crushed Oreos (3)
115g (1 cup) powdered sugar
1/4 teaspoon vanillaĀ
1 teaspoon milk
TOPPING
3 oreos, cut into quarters

Directions:
Line a mini cupcake pan with 12 liners
Preheat oven to 400F
Sift all dry ingredients, except butter
Mix in butter with hand mixer, pastry cutter, or fork and knife
Mix the wet ingredients together in small container
Add the wet ingredients to the dry/butter bowl and mix everything until it is well combined.
Add 2 teaspoons of batter to each liner, don't overfill
Bake at 400F for 5 minutes.Ā
Lower temperature to 350F and bake another 5 minutes.
Frosting Directions:
Whip butter and salt in mixer until pale
Add in crushed Oreos and mix until combined
Add in powdered sugar Ā½ cup at a time
Add vanilla extract
Add milk 1 teaspoon at a time until the frosting reaches your preferred consistency
