Baking Chocolate Puffs - How to make Rough Puff Pastry Dough

Recipe for 12 Chocolate Puffs
INGREDIENTS:
4 oz unsalted butter, grated and frozen
6 oz unsalted butter, grated and frozen
6 oz unsalted butter, grated and frozen
24 oz all purpose flour that has been kept in the freezer for a couple of hours
Start with 1 cup ice cold water
1.5 tsp salt
3/4 tsp lemon or lime juice (or white vinegar)
approximately 8 tablespoons of semi-sweet chocolate chips
1 egg
demerara or turbinado sugar
DIRECTIONS:
- Combine 4oz frozen butter, flour, salt and combine into crumble
- Add lemon juice, then water a little at a time until firm dough forms
- Knead 1 minute
- Let rest in fridge 5 minutes
- Roll rested dough to 9 inch wide by 18 inch rectangle
- Add 6 oz to ⅔ of the rectangle
- Fold the unbuttered part of the dough over the center third of butter. Then fold the left most ⅓ of dough over to create an envelope/brochure
- Turn dough 90 degrees and roll out to another rectangle.
- Add remaining 6 oz butter and repeat folding steps.
- Turn, roll, and fold 3 more times.
- Wrap in plastic wrap and leave in fridge at least 2 hours before using
- Preheat oven to 375F
- Cut dough in half
- Roll first half out to 15 x12 inches
- Cut dough to 6 rectangles 5 x 6 inches
- Place 1 ts Chocolate Chips in a line to the left of the center of the dough
- Fold the left side over the chocolate - Make sure to create a tight seam.
- Now place 1 ts chocolate chips to the right of the center
- Fold the right side over
- Flip dough so seam is down
- Do the same with the other half of dough
- Add egg wash (1 egg, beaten with 1 TB water) to top of dough
- Sprinkle demerara sugar (or raw sugar or turbinado sugar) on top of egg wash
- Bake for 20 minutes, then switch pans in oven
- Bake for 10 minutes more
